At PACINI, we have a deep love for local products and a genuine commitment to the vitality of our regional economy. Our Local Partners
For several years, our soups, sauces, vinaigrettes, and arancini have been carefully prepared by the L’Épicurienne food production facility located in Plessisville. The quality of their products and their attention to detail ensure our guests’ satisfaction every day.
Our Bread Bar® features soft, flavorful breads from Boulangerie St‑Méthode, a local company that produces premium breads made with Canadian wheat. Our delicious spreads, meanwhile, are produced by Margarine Thibault, a Quebec family business based in Trois‑Rivières.
All our delicious pizzas are made with Tipo “00” flour from La Milanaise, a Canadian artisan who has perfected the craft of milling for over four decades. This high‑quality flour—purer, more supple, and lighter—is organic.
Our Mozzafila®, a cheese hand‑stretched daily in our restaurants according to the purest Italian tradition, is produced by Fromagerie St-Guillaume, a true Canadian flagship. You can enjoy the delicate textures and subtle flavors of this exclusive cheese in our antipasti, as well as in some of our salads and pizzas.
Stimpson’s surf clam, a true treasure from the cool waters of the Côte‑Nord, is sourced from Pêcherie Manicouagan, a Baie‑Comeau company committed to sustainable fishing and the quality of its seafood. Discover this delicate and tender mollusk in our garlic gratinéed Stimpson’s surf clams or in our seafood linguine. Canned surf clams are also available for purchase in all PACINI restaurants.
Our tiramisù di panettone and strawberry and pistachio tiramisù, two irresistible desserts made to share, are meticulously prepared at your table using panettones from Viva Panettone, an exceptional local company founded by two world‑renowned artisans. Their panettones, handcrafted in Montreal, are the result of a rigorous selection of premium ingredients. They are exquisite and distinguished by their light, tender, melt‑in‑your‑mouth texture.
Our very popular grain‑fed veal di Parma and grain‑fed veal with truffle and mushrooms, appreciated for their tenderness and quality, are supplied by Montpak, a family business specializing in value‑added veal and lamb processing, proudly producing in Canada since 1959.
