The origin and characteristics of Asiago cheese

Asiago cheese is one of Italy’s most prized cheeses, celebrated for its rich flavor and distinctive texture. Native to the Veneto and Trentino-Alto Adige regions, it holds a Protected Designation of Origin (PDO), which guarantees its authenticity and traditional craftsmanship.

The history of Asiago cheese dates back over a thousand years, when it was first made from sheep’s milk in the Italian mountains. Over time, producers began using cow’s milk, giving rise to the different versions of Asiago we know today. Chefs and cheese lovers alike appreciate it for its perfect balance between mildness and intensity.

There are two main varieties of Asiago:

Asiago Pressato: a young cheese with a soft texture and a mild, milky flavor. Ideal for sandwiches, salads, and fondues.

Asiago d’Allevo: an aged version with a more granular texture and a stronger flavor, featuring notes of hazelnut and caramel. Perfect for grating over pasta dishes or incorporating into rich sauces.

Its aging process plays a key role in the diversity of its flavors. A pressed Asiago, aged for 20 to 40 days, will be softer and creamier, while Asiago aged for several months develops a more complex, robust taste.
