Gorgonzola: italy’s iconic blue cheese

Gorgonzola is one of Italy’s most iconic cheeses. Known for its creamy texture and bold flavor, it is enjoyed worldwide for its versatility and unique character. Originating in the regions of Lombardy and Piedmont, it holds a Protected Designation of Origin (PDO), ensuring authentic craftsmanship and outstanding quality.

Made from cow’s milk, Gorgonzola is aged in carefully controlled cellars, where the development of blue molds gives it its distinctive taste. It comes in two main styles:

  • Gorgonzola Dolce: creamy and mild, with a smooth texture and a slightly sweet flavor.
  • Gorgonzola Piccante: more aged and intense, offering a stronger taste and a crumbly texture—perfect for lovers of bold cheeses.

With its aromatic richness and complexity, Gorgonzola fits beautifully into countless Italian recipes, adding depth and intensity to every dish. It is often used as an alternative to Roquefort or Bleu d’Auvergne, but its softer, more buttery profile gives it a personality all its own.

  • Sautéed Penne with Prosciutto & Arugula: penne pasta paired with prosciutto, tomatoes, and a touch of wine, with an optional addition of Gorgonzola for a creamy and bold finish.
  • Prosciutto & Arugula Pizza: topped with tomato sauce, mozzarella, and prosciutto; it can be customized with Gorgonzola for an extra layer of flavor.
  • Charcuterie Board to Share (Gorgonzola option available upon request): our charcuterie board (prosciutto, Genoa salami) can be served with a Gorgonzola spread for a refined, cheesy touch.
